All kinds of meat and poultry without any exception, fantastic variety of cheeses and dairy products, vegetables, herbs and aromatic herbs, sauces and indispensable bottle of wine for every meal - this is a portrait of Georgian cuisine painted by poor artist.  

 

  Georgian cuisine is the rare case because it does not start with meals but with wine and indispensable toasts. As Georgians say, decent meal must have at least twenty flowery praises on a variety of topics beginning from health of the parents to notorious match of the desires and capabilities. If the number of toasts is not up to twenty during any event or party it is not taken seriously and characterized as "a little sit". In case you are invited to have a meal by Georgian family while your tour to Caucasus, then prepare some good toasts.

 

  Generally speaking, the incredible hospitality and cordiality of the local, the atmosphere of respect and love that prevails at the table are half flavor of the Georgian cuisine. The other half is the freshest products and hundreds of varieties of wine.

  Each historical province of Georgia has its own distinct culinary tradition, such as Megrelian, Kakhetian, and Imeretian cuisines. In addition to various meat dishes, Georgian cuisine also offers a variety of vegetarian meals.

  The importance of both food and drink of Georgian cuisine is best observed during a feast, or supra, when a huge assortment of dishes is prepared, always accompanied by large amounts of wine, and dinner can last for hours. In a Georgian feast, the role of the tamada (toastmaster) is an important and honoured position.

 

   During your Caucasus travel we do recommend to taste followings: soup “kharcho” and “satsivi”, ravioli “khinkali”, “khachapuri” cheese, vegetable ragout "adzhabsandali", "mivadi" kebab, smoked sausages such as lobio, chakhokhbili, dolma, and of course “kutaby” sauces such as spicy adjika, sour- sweet tkemali  and satsebeli based on nuts, fruits and herbs. 


  Wine in Sakartvelo has been producing since 5th millennium BC. Nowadays, in Georgia, more than 500 varieties of grapevines are cultivated. Thanks to huge variety of grapevines there is great assortment of quality wines: red "Saperavi", "Khvanchkara", "Kindzmarauli", "Mukuzani", "Akhasheni", "Teliani" white "Kakheti" "Tsinandali", "Tbilisuri". Of alcoholic beverages grape brandy "chacha" is known.

 
  And of course, you should definitely try this Georgian mineral water "Borjomi", "Nabeglavi" and many lesser known but no less tasty brands.

  In Georgia there are not "Tips" rules but for a good service you can leave 5-10% of the total bill, or simply do not take change. In most restaurants or cafes tips are not included in the bill.
